Moist & Chewy Oatmeal Cake

Heat oven to 350 degrees.

Mix and let stand:
1 cup oats
1 ½ cups boiling water

Cream together:
½ cup butter or shortening
1 cup brown sugar
1 cup white sugar

Add:
2 eggs

Mix together with all ingredients:
1 1/3 cups all purpose flour
2 tsp. cinnamon
½ tsp. salt
1 tsp. soda
1 tsp. vanilla

Pour into a greased 9x13 pan and bake until center springs back when lightly touched or a toothpick inserted into the middle comes out clean.


Topping

Mix together:

4 Tbs. melted butter
1 cup brown sugar
1 cup coconut
1 cup chopped nuts
1 tsp. vanilla

Spread on hot cake while and broil for 2 minutes.
