Shrimp Shells
Mini-meal recipe easy enough for kids to cook

  • 12 flat bottom tortilla shells/chips
  • ½ cup salsa
  • ½ lb. shrimp, cooked in your favorite seasoning, coarsely chopped
  • ½ cup white beans, drained
  • ½ cup pepper jack cheese
  • 2 green onions, sliced
  • ¼ small red pepper, thinly sliced
Line bottom of microwave-safe serving dish with shells. Evenly spoon salsa into shells. Layer shrimp, beans, cheese, green onions and red pepper. Microwave on high for one minute until hot and bubbly.
