Squash Casserole

  • 5 large yellow squash
  • 1 large onion
  • 1 cup shredded cheddar cheese 
  • ½ cup mayonnaise
  • 1 egg, beaten
  • 1 packet (1 oz.) Ranch Dressing Mix
  • 12 saltine crackers, crumbled
  • 2 Tbsp. margarine, melted
  • Bread crumbs

Cut squash into 1 inch chunks and chop onion coarsely. Boil together until tender. Drain well. Mix with all other ingredients except margarine and bread crumbs. Pour into a casserole dish sprayed with non-stick coating. Combine bread crumbs and margarine. Sprinkle over top of casserole. Bake at 350 degrees for approximately 30 minutes.
