In a large bowl, beat 2 eggs with 2 tablespoons sugar. Add 1 teaspoon of vanilla and continue beating until frothy. Whisk in 1 cup ricotta cheese and ˝ teaspoon lemon zest. In another bowl, mix together ˝ cup flour with 2 teaspoons baking powder and a pinch of salt. Stir the dry ingredients into the egg mixture.
Heat vegetable oil for deep frying. When the temperature reaches 375 degrees, drop spoonfuls of the batter into the hot oil. Cook until golden brown. Remove the zeppole with a slotted spoon to paper towels to drain. Roll in confectioners’ sugar and serve hot.
